1/4 cup Lemon Juice
1 cup Extra Light Olive Oil
1 tsp Dijon mustard
1 clove garlic finely minced

Directions:
Directions:
Whisk together lemon juice, Dijon mustard, garlic, and salt and pepper to taste. Drizzle in olive oil while whisking.

This is great on salad, pasta salad, marinade for fish and chicken. Brush on zuchini and yellow squash before grilling. Also good on plain rice or pasta. Add any variety of herbs to personalize.
