For Cookies:
3/4 c. shortening
1 egg
2T. vanilla
2 tsp. salt
3/4 c. sugar
1 c. cooked mashed carrots
2 c. flour
1/2 c. chopped pecans

For Orange Icing:
1/2 box confectioners sugar
grated rind of 1 orange
3 T. butter
1 tsp. orange extract

Cookies:
Cream shortening and sugar; add egg and beat well. Add remaining ingredients and mix well. Drop by teaspoonfuls onto greased baking sheet. Bake at 375º for 10-12 minutes. Cool.

Orange Icing:
Cream sugar and butter; add grated orange rind and extract. Add just enough orange juice to make icing spreadable. Ice cookies.
