9 eggs, separated, 3/4 tsp. salt, 1 1/2 cups flour, 2 ripe bananas, mashed, 1/2 cup chopped nuts, 3/4 cup matzo cake meal, 3/8 cup potato starch, juice of 1 lemon or 1/2 orange, 1 tblsp. cold water.

Beat egg whites with salt until a soft peak is formed. Gradually add sugar, continuing beating until stiff meringue is formed. Beat egg yolks, add bananas and nuts, beat well. Add egg yolk mixture to stiffly beaten whites, Beat sifted cake meal and potato starch together, gradually add meal mixture to egg mixture, continue beating. Add lemon juice or orange juice and beat again. Add 1 tblsp. water, mix thoroughly. Pour in ungreased pan and bake 325º for 1 hour.
