I know that a three-ingredient cookie recipe seems crazy, but it really does work! It's a tasty, quick, inexpensive way to take care of a sweet tooth. They can be made with either chunky or smooth peanut butter, whichever you have in the house.
Preheat oven to 350. Mix the peanut butter, sugar and egg. Drop by spoonfuls onto an ungreased cookie sheet, and press flat with the back of a fork. Bake until the cookies begin to dry out on top, rotating the cookie sheet about halfway through. Cool on a rack, and enjoy! Makes 2 to 3 dozen, depending on cookie size.
