3 eggs
1 cup oil
2 cup sugar
2 cups shredded zucchini
3 tsp. vanilla
1 tsp. almond extract
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 cup flour
Nuts ( optional)

Mix oil, zucchini, blend until mixed and measures 3 cups. Add eggs, sugar, and vanilla. Mix, add nuts and raisins. Pour this mixture over dry ingredients and mix. Bake in greased and floured pans. Two big loaf pans or four little loaf pans. Bake at 350 degree for 50 minutes.
