Mixed colorful greens. ( I don't use iceberg lettuce)
Cherry tomatoes
Mushrooms
Green onions
Diced bell peppers (red, green, yellow etc.)
Diced avocados

One pint to one quart of El Torito Cilantro Pepita dressing. This is available in most markets. I get mine from the El Torito Grill as it is close by and it tastes better fresh.

Chop up greens so they are not too small or large.
This salad is often for a large group so the smaller the greens the easier to eat off of a buffet plate.
Mix all other ingredients and serve.

I like to serve this salad for Christmas Eve dinner. It looks very festive and a nice accompaniment with either meat or pasta.
