1 1/4 cup boiling water
1 cup oatmeal
1 stick margarine
1 cup brown sugar
2 eggs
1 cup white sugar 1 tsp. vanilla
1 5sp. cinnamon
1 tsp soda
1 1/2 cup flour
1.4 tsp. salt

Topping:
1 cup brow sugar
1 cup coconut
1/2 cup milk
1 stick margarine
1/2 cup chopped pecans

Directions:
Directions:
Mix boiling water and oats and let stand 20 minutes. Cream together butter and sugars. Add eggs and beat well, then add oats to mixture. Add dry ingredients. Mix well. Bake in greased pan 357º for 45 minutes. While cake is still warm, add topping and return to oven for 4-5- minutes on broil.

Topping:cream sugar and margarine until soft. Add cream and mix well. Add coconut, nuts and mix well. Spread evenly over cake. Return cake to oven.

Mother used to make this cake quite often when I was growing up. I made it and took it to work a few years ago and everyone went wild over it, they had never eaten it before (I thought everyone had eaten oatmeal cake) This is an example of the generation that is younger than me and how we are losing the old recipes and why we should share them.
