!/2 c. grated Parmesan cheese
2 Tblsp. yellow cornmeal
1 tsp. paprika
1/2 tsp. ground red pepper (more if you like it spicy)
8 (4-ounce) farm-raised catfish fillets
Cooking spray

Directions:
Directions:
Combine first 4 ingredients in a large, zip-top bag. Add fillets; seal bag, and shake to coat fillets with cheese mixture. Coat broiler pan with cooking spray and place fillets on pan. Broil 8-10 minutes or until fish flakes easily when tested with fork.
