2 cups sugar
3 cups flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
1 cup vegetable oil
2 tsp. vanilla
3 cups grated zucchini
1 cup coconut (optional)
1/2 cup chopped nuts (optional

Directions:

Mix all ingredients together, mix well. Pour into 2 loaf pans or 1 tube pan. Bake 350 for 1 hour ou until done.
