1 bag elbow macaroni
1/2 pound lean ground beef
3 cloves garlic, finely chopped
1 small yellow onion, medium dice
1 can Ro-Tel tomatoes and green chilies, with liquid
1 can Rancho beans (or pinto)
2 cups shredded colby jack cheese
2 tbsp. chili powder
Salt and pepper

In a large stockpot, cook pasta according to package directions. Meanwhile, spray a frying pan with Pam or olive oil and heat over medium heat. Cook the onions about 3 minutes, stirring, then add in ground beef. Cook for about 5 minutes, drain fat and add in garlic, chili powder, salt and pepper. Cook until meat is done, about another 5-7 minutes. Reduce heat to medium-low; stir in tomatoes and beans. Cook for about 7 minutes, stirring every so often. Drain pasta and return to pot. Heat stockpot over low; stir in meat mixture. Cook about 3 minutes, then stir in cheese. Cook and stir until cheese is melted and well-combined. Serve immediately.
