1 Tbsp oil, plus more for brushing on the taquitos
1 medium onion, finely chopped
1 clove of garlic, minced
3/4lb ground beef
1 c. salsa, plus more for dipping
2 tsp chili powder
1/2 tsp salt
1/4 tsp pepper
10 (6-inch) flour tortillas
1/2 c. shredded cheddar or Monterey jack cheese
Sour cream for dipping

heat oven to 400º. Heat the oil in skillet over medium heat. Add onion, garlic and cook for 3 minutes. Add beef and cook until no longer pink. Stir in salsa, chili powder, salt and pepper. Cook over low heat for 10 minutes.
Place tortillas on a plate and cover with damp paper towel. Microwave until warm and pliable, about 45 seconds. Top each tortilla with 1/4 c. beef mixture, spreading it to an inch from the edges. Sprinkle cheese over the beef. Roll up tortillas and place on a foil lined baking sheet with the seam side down. Brush taquitos lightly with oil, then bake until tortillas are light brown about 8 -12 minutes. Serve hot with sour cream and/ or salsa
