1 lb ground beef
1 cup onion, chopped
1 cup cubed raw potato
1 cup sliced raw carrot
1/2 cup celery, diced
1.2 cup shredded cabbage
2 1/2 cups canned tomatoes
1/4 cup rice, raw
1 small bay leaf
1/2 tsp dried thyme leaves
1/4 tsp dried basil leaves
3 tsp salt
½ tsp pepper
1 1/2 quarts water
Beef bouillon to taste
Grated cheddar cheese

Cook beef until slightly brown; drain fat to minimum for sautéing onion. Add vegetables; bring to a boil. Sprinkle in rice; add herbs, water, salt and pepper. Simmer, covered for 1 hour. Check for flavor and adjust with beef bouillon as desired. Serve with cheese on top. Canned soup beans are also a good substitute or addition to the vegetables.
