1/4 cup sugar
1/4 cup butter, softened
1 egg
1 tsp almond extract
1-2/3 cup flour
1/3 cup cocoa

Directions:
Directions:
In mixer bowl combine sugar and butter. Beat at medium speed until creamy (1 to 2 minutes). Add egg and almond extract; continue beating until well mixed ( 1 minute).
Reduce speed to low; beat, gradulally adding flour and cocoa, scraping bowl often until well mixed.

Divide dough into thirds, wrap each third in waxed paper and refrigerate until firm ( 1 to 2 hours)

Heat oven to 375 degrees. With floured hands, shape dough, one tird at a time into 1 inch balls. Form balls into desried shape (balls, squares, logs etc.) or use cookie press. Place one inch apart on cookie sheet and bake for 7 to 9 minutes or until set. (surface may crack slightly) Cool and decorate as desired.
