1 lb Manicotti or Large Shells
12 oz Ricotta Cheese
2 Cups Mozzarella Cheese
1/2 Cup Parmesan
1/2 pkg cooked Spinach drained and squeezed of excess water
1-2 Tbsp Italian Seasoning paste or Fresh Parsley, chopped
1 Egg
Minced Garlic
Salt
Pepper
Garlic Powder
Nature's Seasoning
Sauce:

Spaghetti Sauce (pg 68)
1/2 Diced Onion
Spicy Sausage (Substitute with Regular Sausage and Crushed Red Pepper)

Directions:
Directions:
Cook Pasta according to box. Mix Ricotta, 1 Cup Mozzarella, 1/4 Cup Parmesan, Spinach, Seasoning (to taste), and Egg in bowl. Place cheese mixture in zip lock bag, cutting off one corner for easy stuffing. As soon as the pasta has cooled enough to touch, stuff with cheese mixture. Place in baking dish.

Brown sausage and season to taste. Drain fat and add spaghetti sauce. Add sauce to baking dish Top with remaining cheese.
