Boneless, Skinless Chicken Breast
Basil Tomato Pesto from Tastefully Simple, can substitute with Parsley, Basil, and Italian Seasoning)
1/4 Cup Chicken Stock/Broth
1/4 Cup Sun-Dried Tomato Basil Salad Dressing (can substitute with Italian)
Salt
Pepper
Garlic Powder
Nature's Seasoning

Directions:
If possible, marinate chicken with add'l dressing prior to making. Season chicken on both sides. Get grill pan hot (can use regular pan or grill). Place chicken in pan. Top with dressing and Tastefully Simple Seasoning. Sear both sides of chicken. Cook on Medium heat and cover (use aluminum foil, if using grill pan). Add stock about mid-way through cooking or towards the end and scrape up bits from bottom of pan. Cook 20 minutes or until juices run clear (may be longer). Remove chicken, place on plate and tent with foil to rest at least 5 minutes before cutting.

Chicken Note: Sliced Italian chicken goes great with Lasagna Rollatini (pg 95) or Fettuccine Alfredo.

Sauce Note: Can use remaining juice in pan with brown bits (use additional stock if necessary) to finish and/or thin Alfredo sauce (pg 53).
