1.5 lb. of ground beef or turkey
1 clove of garlic
taco seasoning
2 c. cooked rice
1 can of ranch style pinto beans, heated
1 bag of Frito's
1 bag of tortilla chips
1 can of sliced black olives drained
1 small onion chopped
1 tomato chopped
shredded cheese (mexican style)
shredded lettuce
sour cream
shredded coconut
chopped pecans
homemade salsa *see below (can use store bought)

Directions:

Brown ground beef or turkey until done, drain. Mix in garlic clove and taco seasoning and leave on low while you assemble other ingredients in serving bowls. Pile up on plates starting with chips, meat, rice & beans; continue to add other toppings to your tastes. Don't knock the coconut or pecans until you try it!!!

Homemade Salsa:
1 can of rotel
2 garlic cloves
1 tbsp. cilantro (optional)

Place all ingredients in food processor until the salsa is as thick or thin as you like it
