2 tbsp. vegetable oil
1 c. sliced fresh mushrooms
3 c. cold cooked regular long-grain rice
1 c. cut-up cooked pork
2 medium green onions, sliced
2 lg. eggs, slightly beaten
3 tbsp. soy sauce

Directions:
Directions:
In skillet, heat 1 tbsp. of the oil over medium heat; rotate skillet until oil covers bottom. Cook mushrooms in oil about 1 minute, stirring frequently, until coated.

Add rice, pork and onions to skillet. Add remaining 1 tbsp. oil other side of skillet. Cook eggs in oil over medium heat, stirring constantly, until eggs are thickened throughout but still moist. Stir eggs into rice mixture. Stir in soy sauce.
