2 c. mashed sweet potatoes
1 1/2 c. cooking oil
2 eggs
3 c. self-rising flour
2 c. sugar
1 c. white raisins
1 c. chopped nuts
1 tsp. cinnamon
1 tsp. vanilla
Directions:
Directions:
Mix together flour, sugar, and cinnamon. Stir well. Mix in cooking oil and eggs. Stir in potatoes, raisins, chopped nuts and vanilla. Line pan with paper cups. Fill cups about 1/2 full. Cook in 350º oven for 30 to 40 minutes.
