4 C coursely chopped apricots 4 C sugar - divided 3 T lemon juice
Coursely chop apricots in food processor. Put apricots in large pot with 1 C sugar and all lemon juice. Bring to a full boil and boil for 4 minutes. Add remaining 3 C sugar and again bring to a full boil for 5 minutes. Make sure all sugar has dissolved.. Remove from heat and skim foam from top. Fill jars and seal.
