Grilled Doves Recipe

2 tbsp. oil
1 small onion
1 1/2 c. catsup
1 c. water
1/2 c. red wine vinegar
1/3 c packed brown sugar
3 tbsp. lemon juice
2 tbsp. Worcestershire sauce
1/2 tsp. pepper
1/4 tsp. dry mustard

6 whole dressed doves (2 to 3 oz. each), skin on

In a 2 qt. saucepan, heat oil over medium heat. Add onion. Cook for 2 to 3 minutes, or until onion is tender, stirring occasionally. Stir in remaining marinade ingredients. Bring to a boil over medium-high heat. Reduce heat to medium-low. Simmer for 15 to 20 minutes, or until marinade is slightly thickened. Remove from heat. Cool marinade completely.

Split each dove down the back, and flatten. Place doves in 9-in. square baking dish. Reserve 1/2 c. marinade; refrigerate. Pour remaining marinade over doves, turning doves to coat. Cover with plastic wrap. Refrigerate 8 hours or overnight, turning doves occasionally.

Prepare grill for medium direct heat. Spray cooking grid with cooking spray. Drain and discard marinade from doves. Arrange doves on cooking grid. Grill for 8-12 minutes, or until meat is no longer pink, turning doves and brushing with reserved marinade.
