1/4 C. onion, finely chopped 2 tsp. garlic (minced)
1/2 C. celery, finely chopped 1 tsp. dried parsley
2 tsp. Creole seasoning 1/4 tsp. pepper
1 tsp. chili powder 1 tsp. cumin
3/4 C. salsa 3 eggs
1 1/2 lbs. of lean ground beef 3/4 C. bread crumbs
1/2 lb. o f mozzarella cheese, sliced

Directions:
Directions:
Preheat oven to 350 degrees. Place all ingredients, except cheese, in a large mixing bowl. Mix well with your hands. Transfer half the mixture to a 9x5 inch loaf pan. Place mozzarella slices on top, then cover with the rest of the meat mixture. Bake for 60-70 minutes, or until a meat thermometer reads 170 degrees. Let meatloaf rest in pan for 20 minutes.
