2 lbs. of Cheddar cheese, grated
1 1/4 C. mayonnaise
(2) 3 oz. jars pimento, drained & diced
1 tsp. black pepper
1 small white onion, grated (save juice)
Pinch of salt

Directions:
Directions:
Put all ingredients, except tortillas, in a mixing bowl.
Mix thoroughly by folding with a spatula.
Spread mixture on the tortilla and roll up.
Left over cheddar pimento cheese may be stored in a covered container for up to one week.
