Directions:
Saute garlic, 1/2 jalapeņo (no seeds) and 1 chopped chipotle pepper from a can of "Chipotle peppers in adobo sauce."

Add sliced peppers and onions and saute until well cooked. Add chopped tomatoes and cook on low heat.

For Shrimp - saute medium size shrimp in other pan with olive oil, garlic, cilantro. Cook half way and add to vegetables.

For chicken, cut into pieces, boil for 10 minutes and shred with two forks. Then add to vegetables.

Let cook slowly together - add some cilantro, chili powder, cayenne, salt & pepper as you want. If there is not much liquid, add a bit of beer, oj, tequila or something. Squeeze some limes in as well.

For people who don't want it too spicy - easy on the chipotle, jalapeņo, and cayenne. Everything else is a free for all. Just throw it in there and hope for the best.

Serve to drunk friends with guac, beans of some kind, salsa, rice if you want, and tortillas
