4 redfish fillets
1 Creole tomoto, diced
1 large mango, diced
1/4 cup chopped red or sweet onion
2 kiwis, diced
1 jalapeno, finely diced or more to taste(remove seeds and membranes for milder heat)
Juice of 1 lime
splash of red wine vinegar
Olive oil
salt
pepper

Directions:
Directions:
Broil or bake redfish fillets with Salt, pepper and olive oil.
In medium bowl, combine tomatoes, mango, kiwi, onion and jalapeno and mix gently. Add olive oil (tablespoon or so), lime juice, red wine vinegar, and salt and pepper to taste and desired texture.
Serve over warm fish.
