3 sticks softened unsalted butter
3 cups sugar
3 cups sifted flour
6 eggs (extra large)
8 oz package high quality cream cheese ( do not use light)

Directions:
Directions:
Allow butter and cream cheese to soften, then beat well together. Add sugar and beat until well creamed. Add eggs (room temperature) and sifted flour alternately until just mixed. Don't over beat.

Cook in well greased and floured angel food cake pan at 300º for approximate. 90 minutes.

Note: I check this after 80 minutes of baking by inserting a knife into the middle in two locations in the cake. DO NOT overcook -- the knife should show a cake that is very moist, not crumbly. If it looks crumbly, cake will be dry.

Allow to cool for 30 minutes. Invert.

You can add a lemon glaze by mixing 10X confectioners sugar and lemon juice and drizzling across top of cake while the cake is still warm.

I have also added blueberries to the cake batter and that is also delicious.

I have received more compliments on this cake over the years than anything else. It is perfect with vanilla ice cream and fruit.
