4 cube steaks
1 pack crushed Saltines
2-3 eggs
Vegetable oil
Salt and pepper to taste

Spread the crackers in a pie dish, salt and pepper if you like. Crack the eggs in another dish and beat with a fork. Dredge the steaks in the eggs, then in the crushed saltines. Pile saltines on the steak and press down. Place the steaks in a tuperware container in the fridge for several hours to overnight. Long enough for the cracker breading to absorb liquid from the steak and be wet.(f you skip this step the crackers will suck up the oil and the steaks will be greasy.)Heat a heavy large frying pan over medium heat. Add enough oil to thoroughly coat the bottom of the pan. Fry about 5-7 minutes on each side, until it's golden brown. If you find the steaks are greasy, press between paper towels or clean dish towels.
