1 eggplant 1 beaten egg white
instant mashed potato flakes
oregano, salt, pepper, nonstick spray


Directions:
Directions:
Coat 1/2 thick slices eggplant with egg white, then potato flakes. Place on wire rack on baking sheet. Coat slices with nonstick spray; season. Bake at 425 for 30 minutes. Turn, spray, season and bake 10 min more, or until tender and golden. Serve with marinara sauce.
