1/2 cup oil
1 cup sugar
1 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
1 1/2 cup flour
2 eggs
1/2 cup coconut
1 cup peeled and chopped tart apples
1/2 cup hopped pecans

Mix all ingredients together
fill greased muffin cups 2/3 full
Bake 350 for about 25 minutes or until golden
