Ingredients:  
2 cups sliced leeks or green onions
1/4 cup butter
3 potatoes peeled and cubed
1/2 tsp. salt, dash pepper
2 cans chicken stock
2 cups milk
1 cup light cream
1/2 cup chopped chives

Directions:
Directions:
Saute leeks or onions in butter until soft but not brown.
Add potatoes, salt, pepper and chicken stock.
Cook until potatoes are soft.
Puree in blender.
Heat milk and add to potato mixture.

Serve warm or cold.
Add light cream just before serving and garnish with chives.
