1 #2 1/2 can Stewed Tomatoes, drained
1 medium Yellow Onion, diced
2 tbsp. Cooking Oil
2 cloves Garlic, minced
2 small cans diced Green Chiles
1 lb. Sharp Cheddar Cheese, grated
1/4 c. Evaporated Milk

In heavy pan or skillet, heat Oil, brown Onion on low heat until translucent, add Garlic, cook a few more minutes, add Chiles, drained Tomatoes, slowly add cheese stirring to blend, stir in Milk, warm until smooth. [Do not turn heat too high or it will curdle]. Serve w/Crisp Corn Tortilla Chips or Bread Cubes.

This was a regular at most gatherings in the 70s. It is an old-fashioned type of "Queso" dip. Simple and good. Other ingredients can be added such as Jalapeņos for more heat.
