3 Eggs 2 c Sugar 2 t Vanilla 1 c Oil 2 c Zucchini - grated 3 c Flour 1 t Baking Powder 1 t Salt 1 t Baking Soda 1 can Pineapple crushed - drained 1/2 c Raisins 1 c Pecans - chopped
Beat Eggs, Sugar, Vanilla and Oil together till fluffy. Add Zucchini, Flour, Baking Powder, Salt and Baking Soda. Mix well. Stir in Pineapple, Raisins and Pecans. Bake in 2 greased and Floured loaf pans for 1 hour at 325 º
