1 whole chicken
1 cup brown sugar
1/2 cup kosher salt
2-3 bay leaves
1 tbsp fresh thyme
1 lemon
2 oranges or 3 satsumas
3-6 cups water

Directions:
Directions:
-In a large bowl/pot, add salt, sugar, bay leaves, and thyme.
-Cut lemon and oranges/satsumas in half and squeeze into bowl. throw the peelings in bowl as well.
-Add just enough water to ensure chicken is adequately submerged and stir arouind.
-Place chicken in bowl, breast side down and place in fridge over night or at least 4 hours, the longer the better.
-After it has set, remove chicken and douse with black pepper, place the lemons and oranges/satsumas into the cavity
-Place in baking container and bake, covered, at 350 for 1 to 1 1/2 hours, removing cover for lasf 15 minutes or so.
