2 stalks celery, diced
1/2 tsp. garlic, diced
5 or 6 medium potatoes
1 1/2 qt. half & half
1/ c chopped parsley
1 medium onion
1/2 c. butter
water
1 1/2 to 2 lb. Velveeta
Crumbled bacon or Cheddar (for garnish)

Directions:
Directions:
Saute celery, onion, and garlic in butter. Peel and cut potatoes; boil until tender in enough water to cover. Don't drain. Add sautéed vegetables, half & half, and Velveeta. Cook on low heat until chesse is melted an soup is hot. Add parsley. Serve in bowls topped with bacon and cheddar cheese to taste.
