3 lbs chicken breasts, skinless, boneless
2 cups cheddar cheese, grated
2 cups monterey jack cheese, grated
1 4 oz can diced green chilies
1/2 cup cilantro, chopped
1 onion, chopped
2 16 oz cans refried beans
2 dozen flour tortillas

Directions:

Cook and chop up chicken & put in large bowl with both cheeses, chilies, cilantro, onion, refried beans.
In microwave, warm a flour tortilla about 30 seconds, then top with 3-4 T of chicken mixture & fold edges to enclose as packet, secured with toothpicks. When all packets are made, heat in large skillet about 1" deep of corn oil and brown 4-6 packets at a time, turning to brown all over; drain on paper towels. Serve with guacamole, salsa, and sour cream.
These can also be baked instead of fried--heat oven to 350º and bake for 20-30 minutes.
