1 cup flour
1 tsp salt
1/2 tsp pepper
2 T margarine
2 T corn oil
3 lbs chicken parts, boneless, skinless
4 T margarine
6 T flour
6 T dijon mustard
2 cups milk
1 cup white wine
1 tsp salt
1/4 step pepper
1/2 tsp tarragon

Directions:
Directions:
Mix flour, salt & pepper in bowl and coat chicken pieces; brown in large skillet in 2 T margarine and corn oil about 10 minutes. Remove to 13" X 9" pan sprayed with Pam.
While chicken is browning melt 4 T margarine in a 2 qt saucepan and stir if flour & mustard;
Add milk, wine, salt,pepper, tarragon-cook stirring constantly until mixture bubbles & thickens for 1 minute.
Pour sauce over chicken (can be prepared a day in advance and refrigerate covered.)
Cover with foil and bake At 350º for 45-50 minutes.
Serve over pasta or rice.
