1/2 cup flour
1/2 tsp each salt & pepper
3 chicken breasts, boneless, skinless
5 T margarine
1/2 cup onion, chopped
2 garlic cloves, chopped
1 green bell pepper, chopped
2 T curry powder
1 15 oz can stewed tomatoes
1 15 oz can cream of coconut
1/4 tsp worcestershire sauce
1/2 cup raisins
1/2 cup cashews, chopped

Directions:
Directions:
Cut chicken into chunks or serving size pieces; Mix flour salt & pepper in bowl and coat chicken. Heat 3 T margarine in large skillet over medium high heat and brown chicken about 10 minutes; remove.
Preheat oven to 350º.
Add remaining 2 T margarine to pan and saute onion,garlic, pepper about 5 minutes; stir in curry powder & cook 2 more minutes.
Stir in undrained tomatoes & coconut cream, worcestershire sauce & salt & pepper to taste. Simmer and stir in raisins.
Put chicken in 13" X 9" pan and pour curry sauce over it-cover with foil and bake for 45 minutes.
Serve over cooked rice and top with cashews.
