2- 10oz bags fresh spinach
3c. part skim ricotta cheese
1 c. bread crumbs
1/2c. grated cheese
1c.egg substitute

Directions:
Directions:
Preheat oven to 350º
Thoroughly wash spinach and cook it for 5 mins. in a small amount of water. When cooked, spin spinach and press out excess water.
In a bowl, combine spinach, ricotta, 1/4 c.bread crumbs, grated cheese and egg substitute.
Spray the bottom and sides of a 9 in square baking pan with Pam. Coat with 2 TBsp.of bread crumbs.
Spread mixture evenly in pan. Sprinkle with remaining bread crumbs.
Bake for 45-50 mins.until top is lightly browned. Wait 10 mins. before cutting into squares.
