1 Cut up whole chicken (6-7 pounds)
1 Tbs grated fresh ginger
3 Tbs curry powder
1 Tbs fresh thyme off sprig
2 Tbs tumeric
1 Chopped jalapeņo pepper (no seeds)
4-5 Sliced scallions (red and white parts)
3 Cloves garlic mashed
2-3 Tbs vegetable oil
4-5 Diced potatoes
3-4 Cups water
Salt and pepper to taste

Directions:
Directions:
1. Clean and cut whole chicken (you can also buy pre-cut up chicken)
2. Mix together in big bowl chicken, salt, pepper, garlic, ginger, 2 tbs curry powder, thyme, scallion, tumeric, and jalapeņo
3. Let sit for 2-3 hours (the longer the better)
4. After 2-3 hours, heat vegetable oil in pan (large pan)
5. Remove chicken from marinade and brown chicken in pot (approx 3-4 min)
6. Once chicken is browned, add marinade to pot
7. Add diced potatoes
8. Add 1 tbs curry powder
9. Fill pot with water until ingredients are covered
10. Bring to boil and then let simmer for 10-15 min
11. Salt and Pepper to taste
