1/4 c. butter or oil 1 c. whole wheat flour 1 c. milk 1/2 tsp salt pinch of baking powder 4 eggs 1c. mozzarella cheese 1 fresh pear powdered sugar
Heat oven to 425º. Heat oil in a 9x13 pan in oven until bubbly. Beat flour, milk, salt, eggs,and 1 pinch of baking powder until well blended. Pour into pan. Bake until sides of pancake are puffed and deep golden brown, 20-25 minutes. Remove from oven, sprinkle with cheese. Arrange pear slices on pancake and sprinkle with powdered sugar.
