1 T. olive oil
8 oz.Chicken breasts cut into 1" strips
1 red or green pepper, sliced
1 c. celery, sliced
2 tsp. minced fresh ginger
1 tsp. salt
1 T. rice vinegar
2 T. unsalted dry roasted peanuts
2 green onions, sliced
4 large iceberg lettuce leaves
1 T. low sodium soy sauce
1/2 tsp. red pepper flakes

Directions:
Heat oil in 10" skillet. Add chicken, peppers, celery, and ginger. Cook 5 minutes or until chicken is opaque. Stir in garlic, sugar, soy sauce, vinegar and red pepper flakes. Cook and stir for 1 minute. Stir in peanuts and green onions, remove from heat. Divide mixture among lettuce leaves, roll like a burrito.
