One backstrap, salt, pepper, crushed red pepper, oregeno, brown sugar, butter, fresh garlic, and jumbalya.

Directions:
Directions:
Fillet open the back strap so that it is thin and flat on a a cookie sheet. Then beat it with a meat tenderizing hammer. Mix all of your spices and brown sugar together and rub inside and out. Place jumbalya in the backstrap and roll it up like a newspaper. Tie with butchers twine and grill until done on low.
