1lb boned fish-(I use true cod and halibut but trout and redfish are just as good)
1 box Zatarins crab cake mix
1-2 stalks celery with tops
1 med onion
1 whole clove garlic-Bigger the better
1 jar sundried tomatoes
2-3 eggs(more for the trout and redfish)
salt to taste
fresh ground black pepper
Hot stuff if you wish

Use fresh fish or frozen. Thaw if frozen and pat either dry. Chop fine. Chop all vegetables fine as well. Mix all parts into large bowl and prepare as per box instructions. Form patties, I like about a 5" patty 1/2 to 3/4" thick. Place on cookie sheet and refrigerate for at least an hour. Cover the bottom of your favorite skillet with your choice of oil and brown each side. About 3-4 minutes per side. You can make a Romalade sauce or seafood sauce if you prefer. We like them plain. Makes a great fish burger the next day as well if there are any left!!

I use Cod and Halibut due to the fact that I fish in Alaska every year and bring home a ton of it. We have tried it with trout and the cakes seemed to come apart a bit. Still great though. Good eating and lets gofish! Capt Randy Brownlee/GoFish Charters of Ms
