4 Flounder filets
2 lbs. Lump crab meat
3 sticks of butter
1/4 c. Italian bread crumbs
1 tbsp Minced garlic
3/4 c. Chopped white onion
Cajun seasoning
8 toothpicks

Directions:
Directions:
Pre-heat oven to 350º. Next, in a large sauce pan, melt two sticks of the butter and saute' the onions and garlic until the onions turn soft. Put aside and let cool. Pick through crab meat for shells careful not to break up the lumps. Carefully fold the vegetables, breadcrumbs, and crab meat in a bowl. Lay the flounder filets out flat on parchment paper. Sprinkle each side of all filets with cajun seasoning. Evenly spread the crab mixture to each of the filets. Gently roll each filet and secure with two toothpicks. Place into a greased baking dish and put two pats of butter on each rolled filet and bake for 15 to 20 minutes, depending on the size of the flounder. When finished baking, let rest for about 5 to 7 minutes and then remove the toothpicks and serve
