4 Cups of well drained shredded zucchini
2 eggs
1 Cup of shredded Mozzarella cheese
1 Cup of shredded Cheddar cheese
1 LB hamburger
1 8 oz of tomato sauce
1/4 tsp salt
1/4 tsp garlic powder
1/2 tsp oregano
green pepper, or red pepper

onion
mushrooms

Directions:

Mix together zucchini with the eggs, 1/2 Cup of both cheeses. Put into a 9x13 pan that is sprayed with Pam. Bake at 400º for 10 minutes. Don't let brown, just until firm. Let cool. Then cook the hamburger until brown, drain, then add 1/2 of the onion, tomato sauce, and spices. Let simmer for about 15 minutes. Then put on top of the zucchini mixture, and then put on the rest of the toppings, add the cheeses on top, then Back into the oven until all the cheeses melt, and it is hot and bubbly. Take out of the oven, and let cool for just a few minutes.

Zucchini Pizza didn't sound good to me, but I thought I would try it, because I had a huge zucchini from a friend. Wow what a surprise. Even my husband liked it, and he didn't even know it was made with Zucchini.
