4 cups dry beans
1 ham hock
2 yellow onions, chopped
2 green bell peppers, chopped
5 garlic cloves, chopped
1/2 cup fresh parsley, chopped (or 3T dried)
3 T olive oil
2 lbs ground beef or turkey
5 T chili powder
1 1/2 T salt
1 tsp pepper
1 tsp cumin
2 T dijon mustard
1/2 cup red wine
3 16 oz cans stewed tomatoes with seasonings, undrained
1 16 oz can tomato sauce
1/2 cup cheddar cheese, grated

Directions:
The night before sort through beans & rinse & drain; put in large pot, cover with water and let soak overnight.
Next morning drain & rinse beans; put beans back in pot with fresh water to cover plus ham hock and bring to boil; turn down to simmer and cook 1 hour.
Chop vegetables: onions, peppers, garlic, parsley.
In large skillet heat olive oil and saute onions 3 minutes, add garlic & peppers and cook about 8 minutes, stir in parsley-transfer to large bowl.
Brown meat and drain if needed.
Add back the vegetables to meat and add seasonings-chili powder,salt & pepper, cumin;
Add mustard and red wine and stir to mix.
Add meat mixture to beans then add tomato sauce and undrained stewed tomatoes; bring to boil then turn down to simmer, cover and cook 1-2 hours.
When ready to serve remove ham hock.
Serve with grated parmesan cheese or cheddar cheese.
