12 oz pkg jumbo pasta shells
1 T olive oil
1 cup onion, chopped
1 lb Italian sausage, casings removed
4 garlic cloves, minced
1 egg
16 oz ricotta cheese
10 pkg frozen spinach, thawed & squeezed dry
2 cups Parmesan cheese
1 T fresh basil, chopped
1/4 cup dry bread crumbs
1/2 tsp each salt & pepper
1 28 oz can diced tomatoes, drained

Directions:
Directions:
Cook and drain pasta shells, rinse in cool water.
Heat olive oil in large frying pan and saute onion 5 minutes; add sausage breaking into small bits-cook until no pink remains. Add garlic and cook 1 minute.
Beat egg lightly in large bowl and mix in ricotta, spinach, 1/2 cup Parmesan cheese, basil, bread crumbs, salt & pepper and then sausage mixture.
Spread half of tomatoes over bottom of 13" X 9" pan; fill each pasta shell with meat/cheese mixture and arrange on top of tomatoes. Spread remaining tomatoes on top
Heat oven to 350º, cover pan with foil and bake 30 minutes; remove foil and sprinkle with rest of Parmesan cheese and bake 20 minutes more.
