1 1/2 to 2 lb. beef shanks with meat
2 lb fresh okra or 4 (10 oz- packages) frozen okra
2 (14.5 oz) cans tomatoes
1 large onion chopped
1 large bell pepper chopped
6 oz. tomato paste
salt
pepper
tobasco sauce
Worcestershire to taste

Cover soup bones with cold water, about 1 1/2 quarts, and boil slowly for at least two hours. Cool and refrigerate overnight. The next day, remove all grease which has congealed on top of stock. take bones out, cut up and reserve meat. add to stock the cut up okra, onion, bell pepper and tomatoes with juice. Cook for two ours. add tomatoes paste during last 1/2 hour. Season to taste. add chopped soup meat last. serve over rice or in soup bowls.
