3 c. chicken broth 3 c. water 1/2 c. rice 2 large eggs 1/2 c. lemon juice
Bring chicken broth and water to a boil. Add rice and boil for 14 minutes. Meanwhile beat eggs well. Add 1/2 cup of boiling broth to the lemon juice. Add the lemon-broth mixture to the eggs very slowly, and beating constantly. It must not curdle. Now add the lemon-egg mixture to the chicken rice broth. Good hot or cold.
