1 c. water salted
1 c. diced celery
1/3 c. chopped onion
salt and pepper to taste
White Sauce
2 T. butter
2 T. all purpose flour
1/2 tsp. salt
pinch white pepper
3 c. milk

Directions:
Directions:
Bring salted water to a boil. Simmer celery dices and chopped onion in boiling water until tender, for approximately 15 minutes. Reserve vegetables and cooking water. Meanwhile prepare bechamel. Mix in reserved vegetables and cooking water. Reheat; salt and pepper to taste

Bechamel
Melt butter over low heat. Stir in flour, salt and pepper. Pour in milk all at once. Heat over high heat, stirring constantly, until thickened and boiling
