2 cups whipping cream
5 egg yolks
1/2 cup sugar
1 tablespoon vanilla extract
1/2 cup light brown sugar

Directions:
Directions:
Whisk together whipping cream, yolks, sugar and vanilla until sugar dissolves and mixture is smooth. Pour evenly into 5 (5x1) round baking dishes; place in a jelly roll pan; add hot water to a depth of 1/2-inch. Bake at 275º for 45 to 50 minutes or until almost set. Cool custards in water bath. Cover and chill 8 hours.

Just before serving sprinkle about 1 1/2 teaspoons brown sugar over each custard in a jelly roll pan with ice water. Using a kitchen welding torch, caramelize tops.
